Healthy Chai Delish

Filling, refreshing and easy!

chai delish, oats, strawberries, blueberries

 

I’m loving this breakfast and it is jam packed with dietary fibre, protein and omega 3’s.

Ingredients
1 heaped dessertspoon chai seeds
1/3 cup of water
1 dessertspoon walnuts
1 dessertspoon almonds
1 teaspoon pepitas
1 teaspoon sunflower seeds
3 strawberries
1 dessertspoon blueberries
1/3 cup rice or nut milk

Method

 Soak 1 heaped dessertspoon of chai seeds in 1/3 cup of water per person. You can do a bigger batch to feed the whole family that will last a few days when kept in the fridge.

The next day spoon the soaked chai seeds into a bowl, add the fruit, nuts and seeds. You can substitute your choice of any of these.

Ours has strawberries and blueberries added for their vitamin C content, antioxidant benefit and low sugar.

The pepitas
The sunflower seeds provide vitamin E, which is so good for skin, cholesterol and heart. They also contain tryptophan & B1 – both great for mood. are a great source of tryptophan for relaxation and mood – zinc for healthy skin, immune strengthening, stress control, digestive aid, bone strengthening and lowering cholesterol.

The walnuts provide the most antioxidant protection of any nuts along with high amounts of omega 3’s and vitamin E for all aspects of heart health.

The almond will provide your body with good amounts of magnesium so important for producing energy and strong bones.

It is yummy just like this and so a great option if you’re avoiding dairy and oats.

You can add oats into the overnight soaking (unless you have intolerance to gluten) and yogurt instead of rice milk when serving (unless you have a lactose/dairy intolerance). YOU CHOOSE!

Ingredients are one serve.

Frozen Raspberry Yoghurt

This will be a big favourite it’s so yummy! Definitely a healthy dessert to serve at a dinner party and you will be sticking to your weight loss program. (If you don’t tell them no one will know).

Ingredients:

500g pack frozen raspberries

150g fresh raspberries

500g Jalna biodynamic natural yoghurt

a few sprigs fresh mint (save a few leaves for garnish)

½ teaspoon stevia powder

Method In advance:

Put 4 small glasses in the freezer

When you’re all set up and ready to go, get the glasses and the frozen berries out of the freezer.

Divide the fresh raspberries between the glasses, save some for garnish.

Put the yoghurt, stevia and mint leaves into the food processor and whiz, then add the frozen berries and whiz again until combined. Spoon the frozen yoghurt over the fresh berries, and then add a few fresh berries and mint leaves to garnish – Serve.

How can it be so delicious and yet good for you too.

Serves 4 preparation time 5 minutes.

Lettuce Sandwich – bread is so last year…

Hopefully this will turn your idea of a sandwich inside out. Instead of the bread laden variety, try this light, delicious, wheat-free, gluten-free, BREAD-free sandwich that’s positively delicious.

By replacing nutrient-empty white bread with fresh greens, it will provide much needed enzymes, vitamins and minerals. They give us the energy we need without the ‘carb-coma’ that often comes after eating bread.

3-4 lettuce sandwiches as below contain NO high GI starchy carbohydrates, NO sugar, NO salt and nothing artificial. We have added some prawns as quality protein in the filling (optional). They are packed full of vitamins and mineral necessary to build health and vitality. Talk about naturally perfect!

So let’s make a sandwich – any lettuce will do as the wrapper, provided it is soft, pliant and can be rolled.  Play around with heads of Cos, Boston lettuce, Red leaf lettuce, and other varieties to see which you like best.

Lay the filling on thick—this sandwich is packed with flavour not calories.

Ingredients:

  • 2 large leaves
  • ¼ cup mung beans
  • 1/2 cup alfalfa or clover sprouts
  • 1⁄4 ripe avocado, sliced
  • 6 thin slices of cucumber
  • 1⁄2 Roma tomato, sliced
  • 4 thin slices onion
  • 1 tablespoon of your favourite dressing or tahani. (optional)
  • 4 large fresh prawns, peeled (as an indulgence)

Equipment:

  • cutting board
  • chef’s knife, 8-inch
  • mandoline (optional, for thinly slicing cucumber and onion)

Arrange your choice of filling on one leaf of the lettuce. Drizzle with the dressing. Place the second lettuce leaf on top, if leaves are large enough just roll it up. Serve immediately.
