Frozen Raspberry Yoghurt

This will be a big favourite it’s so yummy! Definitely a healthy dessert to serve at a dinner party and you will be sticking to your weight loss program. (If you don’t tell them no one will know).

Ingredients:

500g pack frozen raspberries

150g fresh raspberries

500g Jalna biodynamic natural yoghurt

a few sprigs fresh mint (save a few leaves for garnish)

½ teaspoon stevia powder

Method In advance:

Put 4 small glasses in the freezer

When you’re all set up and ready to go, get the glasses and the frozen berries out of the freezer.

Divide the fresh raspberries between the glasses, save some for garnish.

Put the yoghurt, stevia and mint leaves into the food processor and whiz, then add the frozen berries and whiz again until combined. Spoon the frozen yoghurt over the fresh berries, and then add a few fresh berries and mint leaves to garnish – Serve.

How can it be so delicious and yet good for you too.

Serves 4 preparation time 5 minutes.

Alicia’s High Protein Pancakes

These are absolutely beautiful, seedy, high protein, gluten free pancakes, that fit well into your healthy eating program. They will be on for Christmas breakfast at our home.

Ingredients:

6 eggs separated
4 tablespoons of almond meal
1 teaspoon of vanilla essence
1 tablespoon of grated orange rind
2 cups shredded coconut
1 tablespoons of caramelised buckinis or LSA mix

2 tablespoons of butter or coconut oil for cooking

Pancake topping:

¼ cup pure clotted cream (optional)

1 cup of fresh berries (or frozen that have been thawed)

¼ cup of agave syrup

Method:

Place egg whites in a large bowl and beat egg whites until stiff then fold in shredded coconut.

Place the egg yolks in a smaller bowl and mix in almond meal, vanilla essence, orange rind and Buckinis ( this is rich flavoursome buckwheat and it adds extra fibre and crunchy goodness). Then add this to the egg white mixture with gentle folding.

Heat a little butter or coconut oil in a frying pan and drop in big spoonfuls’ of the pancake mixture, watch that the pan doesn’t get too hot or the butter will smoke and burn your pancakes. Turn over to the other side after about 3 minutes or when golden brown. The pancakes will deflate as you turn them over. If you like very thin pancakes, you can then pat them gently with a spatula.

Pile high and serve with fresh cream, berries and perhaps a dash of agave syrup for a little low GI sweetness……enjoy

Serves 4-6 depending on the size of pancake.  Preparation and cooking time approximately 30 minutes

Blueberry Green Smoothie

If you like a frosty smoothie, use frozen berries.  Yield: 2 cups, 1 serving

2/3 cup waterblueberry green smoothie

1/2 orange, peeled and sectioned

1 ripe banana

1 cup fresh or frozen blueberries

1 cup chopped spinach, Swiss chard, or kale

Place all the ingredients in a blender and process on high speed until smooth. Serve immediately.

Hi my name is Shane and I really wanted to share the amazing difference introducing this smoothie, has made to my health, mostly energy.

I started having it when  Maxine sent out the email newsletter promoting them along with the instructions on how to make them up. I did it for about a month, then told her how good it was for me, but life got busy and I stopped. Two weeks ago I started making them every day as soon as I got home from work. Almost immediately I started feeling great – so much more energy it is almost unbelievable. My skin looks so healthy people have been commenting about how good I look. Just by drinking the blue berry green smoothie each afternoon.
