EASTER SEAFOOD DELIGHT

 

Looking for that special recipe to delight your guests

this Easter – try this exquisite combination of fish, crab,

prawns and asparagus. So delicious and good for you..

 

 

Ingredients

1 medium size coral trout or snapper, scaled, gills removed, filleted, head and carcass reserved
2 sand crabs
40ml extra virgin olive oil
1 onion, finely chopped
1 garlic clove, finely chopped
1 carrot, chopped
1/2 baby fennel, chopped, fronds reserved
12 medium green prawns, peeled, deveined, tails intact, shells reserved
60ml (1/4 cup) pure thickened cream or coconut cream
40g organic butter, chilled, chopped
2 tbs lemon juice
Salt and pepper, to season
12 asparagus spears, trimmed

20ml peanut oil

Stock
2 garlic cloves, chopped
1/2 tsp peppercorns
1 thyme sprig
1 bay leaf
1 parsley stalk
1 carrot, chopped
1 celery stick, chopped
1/2 onion, chopped
1/2 baby fennel, chopped
100ml dry white wine ( can use any dry white wine you have left in the fridge)
850ml cold water

 

Method

1. Rinse trout and then pat dry with paper towels. Set aside.

2. To make stock, place all ingredients with fish head and carcass in a large stockpot. Bring to the boil, then reduce heat and simmer for 25 minutes. Strain through a fine sieve lined with muslin into a jug. Discard solids.

3. Break up crabs, clean and pick the meat and then set aside.

4. Heat half the oil in a deep frying pan over medium heat. Add onions, garlic, carrot and fennel and cook, stirring, for 6-7 minutes or until softened and slightly browned. Add prawn heads and shells, then cook, stirring, for a further 3 minutes. Add 500ml of the fish stock and bring to a simmer. Reduce heat to low and simmer, covered, for 25 minutes.

5. Strain liquid through a fine sieve into a deep frying pan. Bring to a simmer, then reduce heat and cook for 3-4 minutes or until liquid has reduced by half. Add cream, bring back to the boil and cook for 2-3 minutes or until slightly thickened.

6. Add butter and whisk into sauce until melted and combined. Stir in lemon juice and season with salt and pepper. Set aside.

7. Blanch asparagus in a large saucepan of boiling water for 2 minutes, then drain.

8. Add prawns to a medium saucepan of salted boiling water for 1-2 minutes or until they change colour, then drain.

9. Meanwhile, lay fish fillets on a chopping board and cut into 4 portions on the diagonal. Brush fillets, skin side up, with peanut oil and season with salt and pepper.

10. Heat remaining oil in a large frying pan over high heat. Add fish, skin side down, and cook for 3 minutes, then turn and cook for a further 1 minute. Set aside to rest.

11. Return sauce and crab meat to a medium saucepan over medium heat and warm through.

12. Divide asparagus spears and prawns between serving plates. Top with a portion of fish, then spoon over sauce and garnish with fennel fronds to serve.

 

Tip:- If you can’t find coral trout or snapper substitute with barramundi or red emperor..

San Choy Bow (pork mince in lettuce cups)

This is a classic Asian dish that is truly delicious and fits into our health eating program so well.

INGREDIENTS

500 g lean pork mince.

1 tablespoon peanut oil

1 teaspoon sesame oil

1 clove garlic, crushed

4 green shallots, chopped

½ red capsicum, finely chopped

230 g can water chestnuts, drained & sliced

1 tablespoon sliced fresh ginger

1 tablespoon oyster sauce

1 tablespoon tamari or soy sauce

1 tablespoon fresh coriander

Iceberg lettuce washed & pulled apart into cup size shapes.

METHOD

Heat oils in a skillet on medium heat.

Add garlic, ginger and shallots, cook for about 2 minutes.

Add mince and stir until brown.

Add capsicum, water chestnuts, soy & oyster sauce.

Simmer for 3 minutes until sauce thickens.

Remove from the heat, add coriander and mix through.

Leave to rest for about 3-4 minutes and then stuff lettuce

cups with the meat mix.

Serve with chilli sauce (optional) and green tea.

Serves 2 adults for dinner or 4 as lunch or snacks.

Cooking and preparation time 20 minutes.

Spinach and Parmesan Slice

 

This slice is tasty, nutritious and filling, so will work well as

a breakfast or lunch. Make a large tray and it will keep for

a couple of days.

 

  INGREDIENTS

1 small bunch spinach – stems removed and chopped.

3 free range eggs

1 finely chopped onion

4 tablespoons grated parmesan

2 tablespoons shaved parmesan

black pepper to taste

1 tablespoon pure butter

 

METHOD

 Preheat an over to 180C.

Wash the spinach and squeeze or spin dry.

In a saucepan melt butter and onion and cook until starting to brown then

add spinach. Cook until softened.

Remove from heat and mix through beaten eggs, grated parmesan cheese and pepper.

Grease a square or rectangle oven dish approx 25 cm and spread mixture evenly over the bottom.

Sprinkle shaved parmesan over the top and bake in oven for about 20 minutes or until set.

Serves 4  for lunch or breakfast   cooking and preparation time approx. 30 minutes

 

 

Chilli Lime Chicken Skewers with Capers

Ideal lunch or dinner that can be teamed with a garden salad.

These tasty skewers can be cooked quickly on a grill or BBQ

Ingredients:

250g free range chicken breast cut into cubes
1 cm piece ginger, finely chopped2 cloves garlic, finely chopped
1 tablespoon lime juice

½ tablespoon soy or tamari sauce

¼ teaspoon stevia powder or 1 teaspoon yellow box honey

1 teaspoon of hot peri-peri sauce

2 teaspoons minced coriander

8 mini vine ripened tomatoes

4 small onions, peeled and cut into chunks

2 teaspoons of capers (optional)

Pkt of wooden skewers

Method:

Place ginger, garlic, lime juice, soy/tamari sauce, stevia/honey, peri-peri sauce and coriander in a large bowl and mix together well.

Place cubed chicken in the bowl with the marinade and mix thoroughly,ensuring chicken is well coated.

Tip the contents of the bowl into a freezer bag, remove air and place in the refrigerator for at least 8 hours.

Pre-soak wooden skewers in water for at least 30 minutes.

Thread chicken cubes on to each skewer, placing a chunk of onion between each one or two pieces of chicken.

Brush grill or BBQ with olive oil and heat to high temperature. Place chicken skewers on hot plate and reduce temperature to medium. Cook for 10-12 minutes turning once during cooking until cooked through and golden.

Remove from grill and add a tomato to each end of the skewers.

Serve 2 skewers on to each plate, add salad and garnish with capers.

Hommus

INGREDIENTS:

I can organic chickpeas, 400 gm size, drained
1 garlic clove crushed
1 tablespoon tahini
½ lemon juiced
1 tablespoon extra virgin olive oil
1 tablespoon natural yoghurt.
Salt and pepper to taste
Garnish – chopped fresh parsley

 

METHOD:

Place everything except the parsley into a blender. Blend on high until mixture is smooth. If the mixture is a little too dry add a little more oil or yoghurt.

Pour into a serving bowl and sprinkle with parsley.

Use as a healthy dip with carrot and celery sticks or hot Turkish bread.

Chickpeas are also known as Garbanzo Beans. They have a nutty flavour and are high in fibre and flavonoids that keep the digestive system healthy. They also help to lower cholesterol levels. Chickpeas are rich in vitamin E and zinc so they help fight infection and promote healthy cell growth.

Garlic has anti-viral, anti-bacterial, anti-fungal and anti-cancer properties. It has been found to lower blood cholesterol, elevated blood pressure, boost the immune system and to lift one’s mood. If you are concerned about garlic’s effects on your breath, just chew some fresh parsley and no one will know you have been enjoying the benefits of garlic in your food.

Healthy Chai Delish

Filling, refreshing and easy!

chai delish, oats, strawberries, blueberries

 

I’m loving this breakfast and it is jam packed with dietary fibre, protein and omega 3’s.

Ingredients
1 heaped dessertspoon chai seeds
1/3 cup of water
1 dessertspoon walnuts
1 dessertspoon almonds
1 teaspoon pepitas
1 teaspoon sunflower seeds
3 strawberries
1 dessertspoon blueberries
1/3 cup rice or nut milk

Method

 Soak 1 heaped dessertspoon of chai seeds in 1/3 cup of water per person. You can do a bigger batch to feed the whole family that will last a few days when kept in the fridge.

The next day spoon the soaked chai seeds into a bowl, add the fruit, nuts and seeds. You can substitute your choice of any of these.

Ours has strawberries and blueberries added for their vitamin C content, antioxidant benefit and low sugar.

The pepitas
The sunflower seeds provide vitamin E, which is so good for skin, cholesterol and heart. They also contain tryptophan & B1 – both great for mood. are a great source of tryptophan for relaxation and mood – zinc for healthy skin, immune strengthening, stress control, digestive aid, bone strengthening and lowering cholesterol.

The walnuts provide the most antioxidant protection of any nuts along with high amounts of omega 3’s and vitamin E for all aspects of heart health.

The almond will provide your body with good amounts of magnesium so important for producing energy and strong bones.

It is yummy just like this and so a great option if you’re avoiding dairy and oats.

You can add oats into the overnight soaking (unless you have intolerance to gluten) and yogurt instead of rice milk when serving (unless you have a lactose/dairy intolerance). YOU CHOOSE!

Megan’s Story

My name is Megan and I’m thirteen and a half years old.

When I first came to Maxine, I was really over my body. I hated the way I looked and the way I felt all the time.

This was me before I started losing weight

I was always tired and crabby and I felt generally unhealthy. I was always telling myself how fat and ugly I looked. I tried a million different things to change my eating and exercise habits. I tried going it alone, dieting with my mum (who is now also with Maxine),  Mum and I did Weight Watchers together, we even got a gym membership that I used, like, twice. I always found it really hard to keep motivated. And of course, I could never find a weight loss program to sign up for that didn’t require me to be over sixteen. And that would make me feel bad about myself, so I would go home and eat. Chocolate, mostly. And then I would feel bad that I ate chocolate, so I would eat chocolate to make me feel better. Do you see a vicious circle forming?

The worst part about feeling fat and ugly was clothes shopping. At my heaviest/biggest, I was twelve years old, 156 centimeters tall and I weighed 82 kilograms and had to buy size 16 to 18 clothes. So while my friends were borrowing clothes from each other, I could barely fit into clothes that their mums wore!!! So I would go into the WOMEN’S section of Target or Kmart or Big W, and I would try and find something that fit me and that I liked. Yeah, good luck with that. And I would look wistfully at Cotton On and City Beach and think, “Man, if I went in there, those skinny, perfect looking girls would just whisper to their friends, ‘Guuuuuuuuuurrrll, you are WAY too fat to be in here. Stop being a try hard.’ ” So I would be as difficult as possible for my poor mum so that she didn’t take me clothes shopping too often.

So feeling fat really restricted my life. I even hated going swimming in public. I tried to put on this  ’I don’t really care about how I look or what you think of me, I’ll eat whatever I want’ facade, when really I cared deeply about how people perceived me. I think the straw that broke the camel’s back was when a charming young boy in the year below me at school thought it would be a fabulous idea to call me ‘heifer’, (a female cow, not the thinnest of animals, if you get my drift) ‘tank’ and the highly original, ‘fatty’. That was when I decided that I wasn’t going to let my weight control my life anymore. I was tired of feeling awful and creating the illusion that everyone was staring at me. I was going to change.

Enter Maxine and Laurie…

Me, skinny again!

My mum was the one who wanted me to do the whole naturopath thing. By this time I was absolutely desperate. I just wanted to feel good about myself. She asked me whether I was going to see this through and in my head I was like, “DAMN STRAIGHT!!” but she would have looked at me funny so I just said, “You betcha!”

So I filled out the questionnaire with my answers to the what I thought slightly intrusive questions and went into Maxine. Yeah, I was a little wary thinking it would be all the Chinese symbols and Indian chant music and the smell of incense thick in the air and herbs everywhere and I thought, “Oh no, this Maxine is going to come out looking like a stick insect wearing a flowy white cheesecloth shirt with a daisy chain round her neck and flowy blue hippie pants with bells on the bottom, and she’ll say I have to go vegan and live on leaves and berries.” WRONG!!!!! Maxy comes out, with funky clothes and big cool chunky necklace and heels! Not at all fat, but not freakishly thin. Normal and approachable but utterly fabulous!! She whisks me into her little room and has a look over my questionnaire and tells me some stuff about listening to my body, and completely unjudgemental!! Yay!! I remember quite clearly when we came to the last page of the quiz she said to me, “Attractiveness? You put a four? You know that’s the worst one? You don’t think your attractive at all?” I shrugged sheepishly. “You are an attractive, vibrant young woman and attractiveness has absolutely nothing to do with your weight.” The foundations of my brand new positive mind set were in place!!

So Maxy told me the proper foods to eat and gave me the herbs that I forgot to take for ages but I eventually took them regularly. Everything was tailored to my exact needs and lifestyle. But good old Maxine was definitely not afraid to pull me up if I needed a bit of a reality check. And so I FINALLY began losing weight!!! I reached my first weight goal, 78 kilos, then 75 kilos and I started having to buy new clothes. Well. Wasn’t that a very…special experience. I felt totally defeated!! Nearly in tears, I said to Mum, “I’m so fat, I still have to shop in the same shops, I’ve worked so hard for nothing!!” So Mum, being Mum, consoled me and told me that, realistically, I may have to do that, but let’s go look in Sussan.  It was there that I found my favorite black tights that I practically live in and
my favorite gorgeous flowery shirt. I tried them on and looked in the mirror. And proceeded to burst into tears. Yep. Crying in the middle of the changing rooms. A poor woman that was trying something on and she didn’t know what was going on!!! But I felt so good to feel good in something!!

So with new resolve I pressed on with my weight loss. I went through all the stages of dieting:

not eating because I couldn’t find anything good to eat and I was so over having to think about it and make choices all the time, recklessness, exercising to within an inch of my life, making my diet so strict and restricted I literally only ate meat, fruit, vegetables and nuts, and of course the inevitable ‘I’m so fat moments’, through all of which my wonderful, amazing friends, family, parents and of course Maxine and Laurie supported me.

Skinny Minny at Mt Coot-tha!

I still have a bit of a way to go in my weight loss journey, but I am almost at my goal weight, size and shape. I am now 69.25 kilograms and I am a size 12, with one size 10 dress in my box of tricks!! This brings my total weight loss to 12.75 kilograms, and taking with it four dress sizes. But in this I have gained invaluable self-confidence and knowledge about health and nutrition which will help me in a million ways in the future. I feel so much better about myself. I have learned not to put myself down so much and that
I have been created exactly as I am and to celebrate it!! I also learned that I can’t just spit my dummy in the dirt because I ate a chocolate or some loser laughed at me about my weight. We are strong!!!! But I could not have done any of this without the amazing support of my wonderful friends, my gorgeous family and the absolutely fabulous Maxine and Laurie!!! I owe them my health and my self-image!!   Thank you!!

Jullyana’s Story
